Sweet Spicy Potato chips

Well too much work I can say. This would be the First and the last I guess. It's tiring since I don't have deep frying pan so I fried the potatoes in several batches, and I was not that patient so that i found some chips are not crunchy Phewww.. Well if you wanna give it a try, be my guest. Here's what I did.

How to make :
Take 5-10 potatoes. I used the red ones so I didn't need to peel. Wash and brush if you still can see dark skin. Slice them using food processor. Choose the blade that is for chips. After all potatoes sliced, wash 3 times or till the water is clear. Soak in cold water for about 10min then deep fried till golden light brown color. *Watch out the thicker sliced potatoes. They need longer time*

Ground these ingredients below
3 cloves of garlic
5 red chili peppers.
2 tsp of salt
2 cm of galangal
1 kaffir lime
1/4 tsp of sauted shrimp paste *terasi udang* Optional

You can use blender or mortar. After it's smooth, add 50ml  thick coconut milk. Cook it in a large skillet. No need oil. Add 100gr of sugar, 2 bay leaves, 2 tbsp of lemon juice. Stir once in a while in low heat. Once it's thickened, switch off the stove. Add the fried-potatoes. Mix them well as quick as possible, so they don't get stick one another. Some recipes add fried peanuts. Serve with Jasmine rice and other food or serve it as appetizer.
