Rice Porridge

I knew I'd have my teeth pulled out before I came back to FL, so I bought some instant rice porridge sachets from Indonesia, cheating huh lol.
all you need is just boiled water and pour everything there and mixed it. +_+

It's not that bad especially for the taste, just add more healthy food, such as eggs, beef shredded, some veggies hmm. 

Since I cant chew for now, I don't add veggies here. 

Wondering how chef made pretty soft boiled egg without having runny yellow part, I know it needs practice and experiment. >_< 
If you know how to, please share with me. Thanks so much!* Just got tips from Chef Lionel, Temperature eggs, Put in Boiled water for about 8-9 min and then soaked in ice cold water for about 8-9 min. Will try it!

Nigiri Rice


Japanese food is not my cup of tea especially certain sushi with raw fish >_< but I like the style of rice. 
Long time ago I did try making sushi with seaweeds but soo sticky and I made a mess. 


I made this kind of shaped rice today to save some left over, extra soft tender rice I made on Sunday. It's combination of Nishiki and Indian rice. We made mistake buying Indian rice at that time, it's short grain but hard. So we bought Nishiki that's quite soft. I don't wanna throw away Indian rice so I cooked it still but always mix it with lil bit Nishiki. Somehow on Sunday I used too much water. For me who is still wearing braces, that kind of rice is perfect but not for normal people hahaha 


Glad it was not much left after sunday potluck! I made only 7 rolls of nigiri I guess.
Method

I used left over 3 white eggs from last nite's banana cake/bread. whisked white eggs with lil salt, sambal oelek. Fried and sliced. Put aside.

6 shrimps, cleaned, pan fried with lil olive oil, parsley, garlic powder, salt. Put a side.

Left over soft tender rice is warmed up in microwave for about 1-2min. Added lil salt.

Take a plastic food wrap,just as big as your palm or more. Put it on your palm. Take a spoon full of rice, flattened and filled with shrimps and a sliced of fried white eggs. cover with more rice and started making an oval shape with your palm. 

Garnished with sesame seeds, parsley flakes. Served with wasabi and soy if you like or just eat it right away.

Nasi Kuning Bakar -Grilled Yellow Rice with Tempe n plain omelet inside-

I have yellow rice and sambal tempe already but wanting something different to eat them. Yea I know it's just hard work. >_<
I got the idea grilling it. Grilled rice is quite new for me, some said it's good. I haven't tried it even when I was in Indonesia.

I added the filling with plain omelet that's been sliced.



Glad I have friend who often going back home town. The other day when she went back home, I asked her to bring some traditional cake molds. She got me "cetakan lemper" one of them. Never use it until now. 

Uh la la no more sticky stuff on my fingers when I make this. Awesome! 

This morning actually I browsed "Bento" rice molds. They have plenty of shapes. There's shape like this one with 3 rows together. Now I don't need to buy it if I wanna make sushi bento rice! Cool.

Classic Shrimp Fried Rice


It's been a week I cook Chinese food style but too lazy writing and posting it on my blog.
Sorry folks :-)
It was a week ago the idea of changing style of my food anyway. I felt that I needed to add variety of food in my kitchen. It's been 2years I cooked the same food so it's time to change it and I am getting bored too anyway so I was searching other Asian food. At first I thought I wanna try Korean cuisine. I don't wanna browse on internet since I have no idea what the name of the food is.
One day a friend of mine asked me to accompany her to the library. While she's searching her own stuff, suddenly I just remembered what book I should borrow. Cooking book! So I started browsing the catalog that library has in computer but too bad not many Asian cook books there. 

I found one interesting book tho I don't really know well the author. *I do know some Asian Chefs that I watched on food channel. *yea that's my hubby's fav channel FYI besides the documentary LOL* 
It's Easy Chinese Recipes book I got. Family favorites from DIm Sum to Kung Pao. Big nice book with simple lovely photos that I could learn also since I'm into food photography. It said rasa malaysia. So I guess it would be not too far from Indonesian's taste.
I have some of the seasonings but chinese rice vinegar. My hubby said maybe you can't find in walmart or publix but we went to walmart n found one! Yay.

First recipes I tried was stir fried beef. The first opinion that I said was "It's like in Chinese resto" hahaha. I fell in love with the seasoning I guess. So simple and easy.


My second recipe was something with tofu. And my third one was this one. Classic Shrimp Fried Rice! Just need soy sauce, fish sauce, sesame oil, white pepper for the seasoning. I modified the veggies here. I added fresh chili pepper, bell pepper, carrots. The way I cooked is I sauted the veggies on garlic first till they become tender and add seasoning and medium bowl of one night rice. Mixed it well, bring to taste by adding salt. Pour the beaten egg. Mixed it again, meanwhile boiled the shrimps with salt and garlic. Once the rice is ready add scallions and shrimps. Ready to be served.

Nasi Sangrai Sosis


Nasi Sangrai is a kind of fried rice but no spicy nor chili in it. Just saute garlic and shallots in olive oil, added some salt and some slices of chicken or beef sausages and then rice. Mix them well, add one whisk egg, stir and bring to taste.
Simple, fast and yummy!

Rice Porridge

Rice Porridge with grated carrots, sweet corn and potatoes

Got this idea since i have my braces on!
Couldn't chew and it hurts.
Thinking of BUBUR AYAM indonesian style but then i guess i wont be able to eat the rest of it since Bubur Ayam has lots of garnish LOL
so here i am experimenting again with the food.
Actually it is part of BUBUR MENADO but i didn't use all of the ingredients of it.

Ingredients :
1 cup of rice *cup of rice from the rice cooker package*
2-4cups of water
2carrots *i use food processor to grate it*
1potato, cut into cubes
1/2 can of sweet corn,
 if you wanna make it smoother maybe just use food processor for couple of second

seasoning :
2 tsp of salt
3 tsp of lemongrass *i use frozen that's already into rough powder*
2bay leaves
lemon basil

How to make :
Boil the water with rice, cook till they are almost tender.
Add carrots, sweet corns, seasoning *except lemon basil*
add potato, mix them all in low heat.
Keep stirring till there is no more water
Add lemon basil
Ready to be served

Spicy Rice Flavor


Got the idea from my Bengali friend when I helped her cooking for Ifthar. *breaking the fast in Ramadan*
I only use seasoning that I have in my kitchen. Cinnamon, Olive oil, Chili peppers, Garlic powder, Salt, Onion.

Preparation :
3 cups of Jasmine Rice *mine is Aroma rice cooker cup, 160 ml in 1cup *my friend used Basmati Rice* wash 3x till the water is clear enough.
1 Onion, peel, wash, thinned slice
3-5 chili peppers, wash *make sure small ones, if you don't have, big is fine but make sure after it's done, pick them away. It's just for flavor not to be eaten, coz it might be still hot LOL*
2 tbsp of Olive Oil
1 stick of cinnamon
2 tbsp of garlic powder
1 tbsp of salt

How to make :
Prepare the rice cooker. After you wash the rice,put it in a rice cooker pot. Add water up to line 3. Put all the seasonings, mix them well. Close the lid. Set the timer to white rice. It's about 10-15min. Open the lid, mix it. Ready to be served with all kind of food. Grilled chicken, Beef Curry etc. Believe me it's so Yummy! No need spoon or fork to eat this rice. Just use your fingers but make sure you wash them LOL

Arem-Arem a.k.a Lontong Isi


 
Arem-arem is another snack I love if I don't have enough time eating or lazy eating. It's quite heavy snack since it's made using rice and the filling is ground beef mixed with veggies also. You can look at the pics below how I made n prepared. It's a bit challenging tho. LOL


The Ingredients :

I use 2 cups of rice (steamer cup size)
0.5lb ground beef.
4 cloves of garlic.
1 shallot.
4 red chilies.
3 potatoes.
4 carrots.
1 tsp of salt.
1/2 tsp of sugar.
Lemongrass.
Half cup of coconut  milk.
1 1/2 cup of water.
2 Bay leaves.

Methods:

Prepare the seasoning, garlic, shallots, chilies. Ground them all into paste. Saute it with 1 tbsp of vegetable oil. Once it's ready, put the potatoes and carrots that you have peeled washed and cut into small cubes. Cut the Lemongrass and add it for fragrant. After they are tender, put the ground beef and mix them all. Add salt and sugar. Put aside.

Now for the rice, I have jasmine rice *u can use Japanese rice as well* wash it and put it in the steamer ( you can use pot ) mix with coconut milk, salt, bay leave, 1 tsp of corriander stir them (if you use pot) till all the water dry and the rice is tender and soft. After the rice is a bit cold, you can prepare the banana leave and do like the pics :-) Hope you can do it. After all done, wrapped neatly, steam them till you see the banana leaves changed the color, perhaps 15-20 minutes.



I made again using different filling


This time I didn't use beef but thin noodle. I seasoned it with 4 cloves of garlic, 1tsp salt, 1tsp pepper, 3 fresh red chili pepper, 3 green chili pepper that I ground it using magic bullet. 

Cooked the veggies till tender. Covered it so it's done faster. Meanwhile, soaked thin noodle with hot water from tap water is okay.
Once it's ready, mixed with the veggies, add chicken bouillon powder. 

Prepare the rice, coconut milk, salt, bay leaves,coriander,lemongrass. Keep stirring in low heat till no more water. This time I cooked in a pot. Half done. The rice isn't completely done since it will be steamed after you wrap it.

Lupis Ketan-Sweet Steamed Sticky Rice Snack

Lupis Ketan main ingredient is using glutinous rice (sticky rice). It's sweet since there's palm sugar for the sauce. I used to help my mom making this especially during Ramadhan for breaking the fast. Some people in Indonesia make the Lupis Ketan's shaped is like rolling pin and serve it by cutting into small pieces. But here I like to make into triangle shaped since i don't make plenty.

You can see the pictures below to get the idea what kind of snack this is 
What you need and how to make :
300 gr Glutinous rice or sticky rice, soak it one night
1 Block of palm sugar, put it in a small pot, take half cup of water n boil it till it dissolved
Several Banana leaves, thaw it since it's frozen, wash, clean, dry and cut into pieces, perhaps 7cm by 3cm, depends how big u wanna make. *picture 2 from the top left*
Fold it into triangle shape *picture 3* so that you can hold and put 1 tbsp of the rice *picture 4*

Cover it and take half of wooden toothpick (break into two) stick it to make the cover stay *see pics above*
Ready to be steamed for about one hour.

How to serve
After it's steamed for about one hour, leave it till cold. Unwrap the banana leave. Prepare the plate with shredded coconut that's mixed with pinch of salt. Put the lupis ketan on it. it's sticky so that i just roll it till the shredded coconut covers all. Pour the palm sugar sauce and voilaaaa.. enjoy the sweet sensation of Lupis Ketan.
P.S : I prefer boil it rather than steam.. You will get it evenly cooked

Lemper


this is old one first time I made n couldnt find banana leaves yet
The Ingredients 
100 gr Sticky Rice/ Glutinous rice, soak 2 hours or more
1 cup of coconut milk ( i use coconut powder mix with water )
1 tsp of salt
2 bay leaves
1/2 lemon grass

Methods
Wash the sticky rice after you soak it for 2hours. Boil the coconut milk. Add bay leaves and salt. Put the rice till the coconut milk almost dry. Stir it once in a while so that the rice won't stick to the pot. Move it to the steamer and steam it till it's done, I use rice cooker timer 15 minute.

How to wrap
Take aluminum foil (7by10 of more if you wanna make bigger) Put the rice flat on it. Put the filling, how to make it see this link http://harrellfz.blogspot.com/2011/06/rolade-daging.html
but no need egg to wrap for this one.
Roll the aluminum foil so that the rice covers the filling. Clip the edge of the aluminum foil just like you wrap gift.
I got 9 Lemper for this recipe

Yuhuuu I made another Lemper and this time I filled it with TUNA and using banana leaves. 
It's actually the filling for Panada but it's almost the same.

And for the glutinous rice, I cooked traditional way. I used 1 cup and After soaking it for about 8hours, I washed and steamed it for 20min. Meanwhile I boiled coconut milk 2 cups, added lemongrass, salt, kaffir limes leaves.
Once the steamer off I removed the glutinous rice that's just half done cooking into a bowl and pour the cooked coconut milk. Mixed it and covered it till absorbed.
and then put back in the steamer, cook for another 20min.

Steamed Glutinous rice_Ketan Urap


This is quite heavy snack from Jakarta, Indonesia. Some people like to serve with spicy peanut sauce besides grated coconut. Since it's hard to find red chili pepper here so that I don't serve that sauce. I cooked using rice cooker.

How to make
2 cups of glutinous rice, soaked it for 1-2 hour or over nite, washed and steamed it
200 ml of water, boiled and pour it slowly to the unfinished glutinous rice in the steamer, stirred it and continue steaming for 20 minutes add 1 tbsp of salt.
after the rice is done, take one spoon and shape it round and roll it in the grated coconut that has been
Steamed before. Serve with spicy peanut sauce.
