Tembro -Tempe filling in grated cassava cake-

Back to my blog!
Sorry for not writing for quite sometimes. Been busy in the house with bathroom project. Still got to move on with bedroom now. Painting, Putting the carpet and GOD willing the master bedroom will  be done. >_<
My studio is also still in a mess. Too lazy taking pics in a mess studio. But now I'm trying back on track. Cooking and Taking pics. ^_^
I've been cooking yummy snacks so far but let me show this one first.
Tembro! Hmm yummy!

For Indonesians who live abroad probably know what Tembro is. It's actually COMBRO for the original name of this traditional snack. It's made of grated cassava with special filling that we call ONCOM. I have no idea how to make ONCOM here. Got to have special stuff also I think to make it. Well since Oncom is not available so Tempe is the alternative.And that's why we call it TEMBRO. >_< *Ngarang*


Tempe is easy to make and since I am making it too so here I am with Tembro. 
This is the first time I make Tembro, FYI. I heard about this for quite long ago but somehow not too interested making it until few days ago I finally made it. I know why!! Grated Cassava can only be found in asian market and hubby is not fond of going to asian market lol. And I'm too lazy make grated cassava manually. 
Yup the main ingredient besides Tempe is grated cassava and little mixed of Dried Coconut flakes unsweetened one. Those are available in the Asian Market only.
The thing that my hubby avoid for this snack is frying. That's why he hasn't tasted it. >_<
I guess this is only for me then.

Tempe Bacem

Tempe Bacem

Ingredients
2 packs of Tempe,just like in the pic I cut half again, big diced.
Some slices of Galangal roots
Bay leaves
2 knuckles of Tamarind paste
1 big Shallots,3 cloves of Garlic, 3 tbsp of Dark brown palm sugar *add more if it's not sweet enough for you*, 1 tsp salt, 2 tbsp coconut oil, grind them all into paste.
1 cup of water (coconut water)

Method
Prepare the pan, bring the paste to boil. Add galangal roots, bay leaves, tamarind paste and diced of tempe. Cook till it absorb. Put aside.

Prepare another pan with enough cooking oil to deep fried or just coated pan with little oil so you will have it pan fried, your choice. I like to cook it till I see dark spots almost burnt :-)

Served with Jasmine rice and other food you have. Simple spinach soup will be good.

Tempe Salad



Yellow! How r u bloggers! Glad I'm back here cooking n taking pics of my food! Been having fun in my hometown with bunch of yummy food and good friends n fam, it's heaven huh. Well gotta be back tho to my lovely lonely hubby :-) Yup 2 months is more than enough for us. 

Here i am with new recipe. I got the recipe from my sis's friend when we were in LOMBOK. Never heard of that place? it's way better than BALI i can say. Pristine beaches, no traffic for sure, and yummy food. Will be back someday!

This is actually simple recipe but since it used coconut oil so the taste is way much better and so different. 
Ingredients
1 pack of Tempe, diced
1-2 cloves of garlic and shallots, sliced thinly 
1 tsp of salt
1-2 cups of fresh spinach
5 tbsp of coconut oil, i used coconut oil from costco, 100% organic
2 fresh red chili pepper, optional
3 tbsp sweet soy sauce
2 tbsp oyster sauce

Method 
Medium pan, heat the coconut oil, saute garlic, shallots and chili pepper for about 3 min then add diced of tempe, cook for about 2 min then add sauces. Mix them well for about 5 min, bring to taste by adding salt. Turn the stove off then pour the spinach, tossed them. Ready to be served with jasmine rice or just eat it right away for light brunch.
The recipe is for 2 small people :-)

Nugget Tempe

Woohoo my other experiments in the kitchen!
Nugget Tempe  with tillapia,yummy!

It's recommended for those who wanna make variety of cooking Tempe

Original recipe is using chicken but I used tillapia instead, we love it.


Ingredients n method

Seasonings 
 1 tsp pepper
1 tsp parsley
1 tsp garlic
1 tsp salt
1tsp chicken bouillon 
plus 1 tsp nutmeg powder
Put it in a bowl 

 2 packs of Tempe, 5.0z each
1 fillet, tilapia
diced and steamed
mashed in a bowl that has already seasonings in it, cool it off
 mixed with 1 egg
You can taste it and add more seasonings as you desire.
  shaped it like nugget.Prepare 2 bowls for whisked egg, and Bread crumbs.
Roll the nugget in whisked egg and bread crumbs till all finish.


Fried just couple of min till it's light brown. Watch out for burning it like I did lol

served with warm jasmine rice and sri racha sauce.

Tumis Tempe in Spring rolls skin



Another Simple light menu that can be appetizer for my hubby. Tumis Tempe or Stir fried Tempe in spring rolls skin. Got the idea when I ate at Vietnamese cafe. The filling in that cafe was shrimps, vermicelli and some veggies I guess. Now I change it. 



The pic on the left is for the filling. 

1 package of Organic tempe, diced
1 clove of garlic
1 small shallot
several cherry tomatoes, sliced
several green chilies *optional*
1 Zuchini, diced

Seasonings
1 tbsp sweet soy
1 tsp white pepper
1 tsp salt
1 tbsp oyster sauce
1 tsp chicken buoilon powder
1 tsp sesame oil
1 tbsp olive oil for stir fried




How to 

Saute garlic and shallot in a tablespoon of olive oil. Pour the green chilies, Zuchini and Tempe. Add all seasonings. Bring to taste. Set aside.



Ready to wrap it on spring rolls skin. If you wanna see this video youtube how to wrap spring rolls



Served with sri racha sauce if you want just like my hubby or peanut sauce. For me just eat it like that, spicy enough when you bite chilies inside. >_<

Wings & Tempe in Chinese style of cooking


Gotta cook fast but yummy! Here it is! Wings & Tempe in Chinese style of cooking. 

Ingredients

5-8 wings, boiled till tender
1 pack of Tempe, sliced 
1 shallot 
2 garlic
2 tbsp olive oil
2 tbsp oyster sauce
1 tbsp soy sauce
2-3 tbsp sweet soy
1 tbsp sesame oil
1 tsp salt
2 tbsp extra hot sauce ABC *optional*
1 green onion for garnish

How to cook 

Set aside the boiled wings. Chopped shallot n garlic. Prepare the pan with 2 tbsp olive oil. Medium heat. Saute garlic, shallot. Add salt. Add wings and cook till the skin got burn little. Add oyster sauce, soy sauce, sweet sauce,sesame oil. Add Tempe. Cook for about 10min. Bring to taste. I added extra hot sauce to make it little bit spicy. Garnish with green onion. Served hot with Jasmine rice!

Organic Tempe (Tempeh) Burger

I have been talking about Tempe for couple of days. Been making it also for my customers. Nice to hear they like it. 
Time to take a break from making Tempe. Unless another order comes :-)

I have made Tempe for my own. I tried the organic one this time. Some people already change their food into organic so why not trying once you can make your own. 



Tempe Burger

Yup some of you might have tried it but not us yet. Browsing some recipes that might meet my taste. Well, I am picky eater, hard to please my tummy >_< 


Ingredients

1 small pkg organic Tempeh
3 cloves of garlic
1 green onionm chopped 
3/4 onion, chopped
1 tsp salt
1 tsp pepper
1 tsp nutmeg powder
1 tsp sweet soy sauce
1 tsp soy sauce
1 tsp rice vinegar *optional*
1 tsp chili powder
1 tsp bell pepper powder
1 egg separate the white
1 tsp olive oil

How to make it

Diced, Steamed tempe for about 20 min. Then mashed it. Set aside.

Prepare pan with olive oil. Saute garlic, onion, green onion. Add all seasonings. Bring to simmer, taste it and set aside. 

Prepare the bowl with mashed Tempe in it. Mix all seasonings then add yolk. Ready to shape it round just like burger.
If you have plastic gloves then better use it. I only tear off the plastic and shape Tempe.

I wait for my hubby to do it coz i wanna have it fresh
so i wrapped it with plastic and keep in fridge just couple of hours
let it rest so the seasonings absorb maybe even better


P.S : I Kept one in refrigerator over a nite. I did make it as the second experiment and then I baked it for about 10min. Hard to flip it so I broiled for top side. I used small oven that I can set medium broil

For pan fried after you have tempe burger ready,and let it cool in refrigerator for about an hour, whisked the egg white in a bowl. Dipped tempe burger and fried/pan fried it till golden color.

Pan fried till golden color, flip it to get each side cooked


Prepare the bun and the veggies if you have. For now I am not ready for that hahaha and I couldn't eat well either since I just had my back teeth added with braces >_< 
so I let hubby eat it and he said Yummy!

P.S : The difference of pan fried and baked broiled is the texture in my opinion. Since it's quite thick, the one in pan fried is bit wet moist than the baked broiled one. I like the baked broiled one.

Tempura Tempe

Some Indonesians call it Mendoan, but some call tempe goreng tepung or tempe tepung. Anyway the idea is frying it with batter. You can make it from scratch or ready batter. I never use measurement for this sorry. 

The main ingredients are all purpose flour, rice flour. I use rice flour in batter to make it crispier. Mixed it with water and add seasonings ; salt, white pepper, coriander.* you can add little turmeric* I add chopped scallions once the batter is ready. 


The hard thing of this tempura is, slicing the Tempeh thinly without breaking it. I am not really good at it. I guess you should use machine if you wanna make it quite thin. So I always make it as thin as possible without breaking it.

Deep fried till golden color and eat it while it's still warm for crispy yummy taste. 

Served with sweet soy sauce that's added with fresh chopped green small chili *thai chili*, hot enough for me but my hubby prefers eat it with sri racha hot sauce. That's good too.

Sambal Goreng Tempeh



Love Tempeh! My home made Tempeh is finally cooked. I chose my mom's recipe. 
I remembered she liked cooking it n yummy!

but i added coconut milk. That blog is in Bahasa. Let me try to put it in my broken english :-D

Ingredients 
1 pack of Tempeh, cut into dice 
3 Big chili peppers, sliced
5 big shrimps, cleaned *optional, if you don't want, you can add tofu, so its pure vegetarian*

Seasoning

2 shallots
1 clove of garlic
1tsp of ginger powder
1tsp of pepper
1tsp of salt
Make it into pure and saute in 2 tbsp of olive oil

3 tsp of lemongrass or 1lemongrass stalk

2-3 tbsp of sweet soy sauce *it depends how much sweet you wanna have*
1 cup of water, 3tbsp of coconut powder. Mix them all together. *If you don't wanna use coconut powder is ok*



How to cook 

Prepare the pan with 1 tbsp of olive oil or vegetable oil. In medium heat, saute the pure for about 5min. Add the shrimps till they are pink. Add tempeh, chili. Pour water mixed with coconut milk. Add sweet soy sauce, lemongrass. Bring to boil. Served with white rice.

Baked Tempeh

The simplest way to cook it by marinated with garlic, salt, coriander mixed in warm water
marinated
 Prepare the pan n little oil to cook it, flip it over till you see dark brown. Spray more oil if you want. Served with sambal hot sauce and white rice! So simple and yummy

Kering Tempe -Fried Tempe in sweet & spicy flavor-

one famous recipes of tempe in Indonesia


  Sweet and spicy Flavor Tempe


Tempe, special food from Indonesia, is made from fermented soybeans using tempe starter "ragi" which i don't know how to get it here in USA. But my friend, she said she made it from the scratch. What a talented lady. Hope her business runs well. Thanks Yulfi Moore.

Tempe can be cooked in several ways. For now I wanna make just like my mom used to make when I was little. Kering Tempe.




Preparation :
Big skillet
2- 4 small packs of Tempe, sliced into small rectangles
2-5 Red chilies, sliced

3 Cloves of garlic
2 Shallots
1 Tbsp of salt
1 Tbsp of white pepper

1 Tbsp of lemon grass (i have the one that is frozen n chopped coarse, bought at Myre asian market) or you can use 1 stalk of lemongrass, sliced into 1-2 inch
2 kaffir lime leaves
1- 2 Cups of vegetable oil (to fry the tempe)
3 Tbsp of Gula Jawa (Palm Sugar or brown sugar)
2 Tbsp of Sambal Oelek (Red chili paste)
3 Tbsp of water

*Additional ingredients, optional* 
Dried anchovy fish,soaked in water first if you wanna reduced the salt
1/2 cup of peanut, fried 


Method

Grind Garlic, shallots, salt and pepper. Make it into puree. *I used magic bullet and to make it easier blend, I added olive oil n water lil* Put aside. 

Fried tempe and additional ingredients if you use them. Put aside.




Heat the skillet with 1 tbsp of vegetable oil. 



Sauteed the puree. Add red chilies and lemon grass, kaffir lime. Bring them to Simmer for about 2minutes. Added water, palm sugar. Mixed them well till brown sugar turned into caramel *just like in the pics above* turned the stove off and right away added the fried tempe and additional ingredients if you use. Mixed them well till all stuff coated with caramel.









Ready to be served with yellow rice / white rice, garnish with cucumber.

Today I had potluck gathering with my 2 friends and she made nasi kuning / Yellow rice, sambel goreng kentang. And we were crazy, or I was crazy for creating Indonesian nasi tumpeng hahhaha next time I would make better arrangement. ^_*
