Kering Tempe -Fried Tempe in sweet & spicy flavor-

  Sweet and spicy Flavor Tempe


Tempe, special food from Indonesia, is made from fermented soybeans using tempe starter "ragi" which i don't know how to get it here in USA. But my friend, she said she made it from the scratch. What a talented lady. Hope her business runs well. Thanks Yulfi Moore.

Tempe can be cooked in several ways. For now I wanna make just like my mom used to make when I was little. Kering Tempe.




Preparation :
Big skillet
2- 4 small packs of Tempe, sliced into small rectangles
2-5 Red chilies, sliced

3 Cloves of garlic
2 Shallots
1 Tbsp of salt
1 Tbsp of white pepper

1 Tbsp of lemon grass (i have the one that is frozen n chopped coarse, bought at Myre asian market) or you can use 1 stalk of lemongrass, sliced into 1-2 inch
2 kaffir lime leaves
1- 2 Cups of vegetable oil (to fry the tempe)
3 Tbsp of Gula Jawa (Palm Sugar or brown sugar)
2 Tbsp of Sambal Oelek (Red chili paste)
3 Tbsp of water

*Additional ingredients, optional* 
Dried anchovy fish,soaked in water first if you wanna reduced the salt
1/2 cup of peanut, fried 


Method

Grind Garlic, shallots, salt and pepper. Make it into puree. *I used magic bullet and to make it easier blend, I added olive oil n water lil* Put aside. 

Fried tempe and additional ingredients if you use them. Put aside.




Heat the skillet with 1 tbsp of vegetable oil. 



Sauteed the puree. Add red chilies and lemon grass, kaffir lime. Bring them to Simmer for about 2minutes. Added water, palm sugar. Mixed them well till brown sugar turned into caramel *just like in the pics above* turned the stove off and right away added the fried tempe and additional ingredients if you use. Mixed them well till all stuff coated with caramel.









Ready to be served with yellow rice / white rice, garnish with cucumber.

Today I had potluck gathering with my 2 friends and she made nasi kuning / Yellow rice, sambel goreng kentang. And we were crazy, or I was crazy for creating Indonesian nasi tumpeng hahhaha next time I would make better arrangement. ^_*
