Semur Daging & Kentang / Indonesian style Beef and Potatoes Stew

Yup it's sweet! But rich with spices!
This time I was cheating ^^ I got ready instant seasoning from my friend. Bamboe brand. Just Cooked the beef in pressure cooker for 40min. Pan fried the potato chunks till it's tender. Add the ready instant seasoning in it. Add the beef stock, I used  2 cups and add the tender beef. Bring to boil and served with jasmine rice. Quick! ^^ But it's simple if you wanna make it from scratch tho.

Beef Soup -Sup Daging Sapi

Soup is the best food in this cold weather! Indonesian Style Soup is good to accompany us!
So simple so easy and so clear! that's what I want for soup, not creamy one like western :-)
Ingredients
1/2 lb of Beef stew 
3-5 potatoes, washed, cut into 4 pieces each
4-5 carrots, sliced round
2-3 green onion, chopped
half head of cabbages, sliced
Meatballs and tofu *optional*
2-3 tomatoes

Seasoning
3-5 cloves of garlic
1tbsp of salt
1tbsp of pepper
Grind them and sauted
 2 shallots, peeled, sliced thin and fried

Method
Boiled the beef in 4 cups of water till they are tender
Pour the seasoning and veggies
Bring to taste, by adding more salt or pepper.

Served with Jasmine rice, garnished more with tomatoes and green onion.

Soto Betawi

Soto Betawi Munik Instant seasoning actually. I'm cheating lol.
Heard Munik brand is yummy so I bought some from Indonesia.
well it's not the same as I know about Soto Betawi, the broth is not pale yellow. The taste is quite the same tho. 

Additional garnish just tomatoes, Indonesian pickles *diced cucumber, carrots, fresh chili that's been added vinegar n lil sugar*

Served with lontong or rice and gnetum gnemon crackers aka emping hahah *I still remember the biology term of it* and potatoes that had been diced and boiled.

Hubby loves it!
He ate lontong rice cake too!

Next time I would make my own seasoning from scratch!

Home Made Abon Sapi -fried shredded beef-

Finally I made it!
Oh My! 

Abon Sapi is made of beef that's cooked till tender and then mashed it using the meat tenderizer and shredded it. 

I cooked it using presto for 45min after the whistling. I used the chunks beef from costco. I didn't weigh it but it's 2 cups. 
In the presto I added galangal and bayleaves.


Prepare the seasonings:

5 Shallots (i only had half big onion), 4garlic, 1tsp coriander,1tsp salt,1tbsp sugar, 3 candle nuts *macadamia nuts* some chilies *optional*

After I made it into pure, Sauted it.

Pour 300ml coconut milk. Bring to simmer and then add the shredded beef. 
Cook till it's absorbed. Meanwhile stiring it, folding it in low heat non stop.

Once it's dried, Pour vegetable oil, till it's covered the shredded beef and fried till it's done. *color changed*
This part was quite taking times! Oh my, stirring folding over and over again to keep it away from burning.
But the worst part was draining it from the oil once it's done.
It should be really dried. I used potato ricer that's put paper towel and then pressed it. Separated the lumps into fine shredded beef.
I fried some cloves of garlic to be added once the shredded beef is ready. Fried Shallots would be better too but I didn't have it.
Quite glad I made it! I almost gave up making it. ha ha 
Now I can make Lemper, Yay!
Hope it's yummy! :-) I am fasting so I can't taste it yet.

Sate Padang



I found The best Indonesian Restaurant when I visited my friend in NY. I ate there twice! First eating, I was not making good choice. Maybe since I had the braces just couple of months so I was picky choosing the food. But the second time, I went with group of friends and one of them choosing Sate Padang n I asked how's the meat? Was it hard? she said NO. It's yummy!Indeed! OMG. 


So Since then I told to my self, I should be able to find or make that kind of sate padang. Whoaaa it's a dream really tho! >_< I never realize I would make one here. But well here I am.

I know Sate Padang use certain "unusual" part bodies of cow. It's not tenderloin, sirloin, stew sort of. If I tell you, maybe you will have the same expression just like my hubby.. Ewwww.. hahahaa well anyway I don't use it here yet. I might look for it later if this one is success. I only wanna make experiment in my kitchen first with available ingredients. 

I browsed some links and got youtube video sate padang in Bahasa Indonesia. I didn't use all ingredients here since I couldn't find it,such as "Daun Kunyit" hmm is it turmeric leaves? Well hopefully it won't effect that much. >_<





Ingredients

half pound meat 

seasonings

2 big cloves of garlic
1 big shallot
several fresh chilies, small red n green ones 
*depends on how much spicy you wanna have*
1 tsp salt
3tbsp olive oil 
Used magic bullet to make them into puree

lemongrass, 
kaffir limes, 
tamarind paste, 
galangal
*they are added when you sauteed the puree


2tsp corn flour
50-100ml water
Mixed them well
*to make the sauce thicker*

Garnish
2 shallots, sliced thinly, fried
* I didn't use it*

How to

Boiled the meat till tender, sliced, set aside
Keep the broth
Sauteed the puree, take half to marinate the meat
take another half and pour it in the broth

Boiled the broth with the sauteed puree
add corn starch liquid while you stir
not too thick not too thin,set aside

Arrange the meat in a skewer




Grilled for about 2-5min


Served with rice cake that's been diced, sliced.

*this is the rice cake process and then boiled till the rice done



Actually there's ready rice cake wrapped in plastic, but somehow I don't like it anymore. So I try making it and hopefully it works. I remember making it when I helped my mother.
After couple of min, hmm let's say 50min up to 1,2hours, depends on how many you boiled.
I didn't make it that right, since 2 of packages tore out tho not that bad >_<
drained and let them cool




After that sliced, diced. I made the broken lontong into nasi Himpit.
once it's cold in that red bowl, I can slice it.

In a plate, arrange rice cake, satay in skewer and then pour with the sauce. 

If you make fried crispy shallot, sprinkled it on top
 hmm can't wait eating it.

Mini Samosa with Spring Roll Sheets



I guess you know what Samosa is. I didn't plan making real samosa tho. I only change the skin shaped for my fav filling this time. Usually I make it just like spring rolls a.k.a Risoles or Pastel in Indonesia a.k.a empanades here.

First time making triangle shapes, Phewww it's quite hard LOL and I used small spring roll sheets so it's even taking longer time! But I survived! >_< 


Ingredients

1 lb ground beef
2 big potatoes, washed, peeled, diced
2 big carrots, washed, peeled, diced
1 cup of green beans, washed, sliced small 

3 cloves of garlic
3 tbsp of salt
3 tbsp of white pepper
2 tbsp chicken bouillon powder
2 tbsp olive oil
2 small packages of spring rolls sheets
enough cooking oil to fry

How to

Garlic, pepper, salt make into paste. Saute it in 2 tbsp olive oil. Cook veggies till they are tender. Add ground beef, seasoning, bring to taste. Cool it down.

Prepare the spring roll sheets. I used small ones. Read the direction to thaw and use it.

Once they are ready, prepare the pan with cooking oil. Deep fried until golden brown. Served with sri racha sauce!

Gulai


Ingredients & How to cook

3 Shallots * I used Yellow Onion*
4 cloves of garlic
1 tbsp of Sambal Oelek in a jar or use fresh red chilies
1tbsp of salt
1tbsp of pepper
1tbsp of turmeric
1tbsp olive oil
1tbsp of ginger powder
Grind them into paste

Prepare pan/pot
Saute the paste. Add bay leaves, lemongrass,
1tbsp of Pataks Indian red curry *optional if you wanna make it spicier*
2 star anish
3 cloves
1 cup coconut milk
bring to boil. Add more water if you want to have more broth later. Add salt n sugar. Bring to taste.

Add beef chunks. Cook in low heat. Add carrots/potatoes. Cook till all tender.
Serve with Rice.

the same recipe as i made it with salmon but no bell pepper 
*since i ran out of it* 
just add canned mushroom and zuchini

Macaroni Schotel

Preparation

0.5 lb ground beef
1lb pack of macaroni pasta
2-4 cloves of garlic
4 eggs
1 onion
1 tbsp of salt
1 tbsp of blackpepper
2 cups of milk *i used 20 tsp of powder milk and mixed with 2 cups of hot water)
1 green onion *optional* chopped
1 tbsp of olive oil or canola oil
Grated cheese, *Parmesan, Cheddar will do* for topping
1 Pyrex

How to make
Onion, garlic, salt n pepper grind in food processor or blender till they're smooth*actually sometimes I just chopped them*. Saute in a big skillet with 1 tbsp of olive/canola oil for about 5min in medium heat. Pour the ground beef till it's cooked. Boil the macaroni. Stir it well till its tender. Drained it. Once it's drained, mix it with ground beef. When it's cool off, beat the eggs and pour them all together with milk. Mix all together. Add the chopped green onion, carrots *optional*. Prepare the Pyrex. Pour it. Sprinkle on top of it with grated cheese till all covered. Bake in 180 F for 55min. Served with Extra hot sauce if you like.

Spring Rolls aka Risol

Preparation :
The seasoning : 3 cloves of garlic. 1 tbsp of salt. 1 tbsp of pepper. (Ground them all) 1 Block of Knorr Beef.
The Filling : potatoes, carrots, ground beef
and thin rice noodle (mihun) *soak it in warm water for about 10min.
1 pack of spring rolls wrappers.
How to make :
Cut the potatoes n carrots into cube. Saute the ground seasoning, bring it to simmer. Put the veggies and knorr. when the veggies are almost tender, add the ground beef. Cook till all tender. Add more salt if you think its not enough. The last, put the rice noodle. Mix them well.
Prepare the spring roll wrapper. Be careful when you wrap it. Just take 1 spoon of the filling. Fold the wrapper *just follow the instruction from the plastic or box of it*
You can glue it with water on your finger when you fold to keep it closed. Fry in a hot oil for 3-5min until its light brown

Arem-Arem a.k.a Lontong Isi


 
Arem-arem is another snack I love if I don't have enough time eating or lazy eating. It's quite heavy snack since it's made using rice and the filling is ground beef mixed with veggies also. You can look at the pics below how I made n prepared. It's a bit challenging tho. LOL


The Ingredients :

I use 2 cups of rice (steamer cup size)
0.5lb ground beef.
4 cloves of garlic.
1 shallot.
4 red chilies.
3 potatoes.
4 carrots.
1 tsp of salt.
1/2 tsp of sugar.
Lemongrass.
Half cup of coconut  milk.
1 1/2 cup of water.
2 Bay leaves.

Methods:

Prepare the seasoning, garlic, shallots, chilies. Ground them all into paste. Saute it with 1 tbsp of vegetable oil. Once it's ready, put the potatoes and carrots that you have peeled washed and cut into small cubes. Cut the Lemongrass and add it for fragrant. After they are tender, put the ground beef and mix them all. Add salt and sugar. Put aside.

Now for the rice, I have jasmine rice *u can use Japanese rice as well* wash it and put it in the steamer ( you can use pot ) mix with coconut milk, salt, bay leave, 1 tsp of corriander stir them (if you use pot) till all the water dry and the rice is tender and soft. After the rice is a bit cold, you can prepare the banana leave and do like the pics :-) Hope you can do it. After all done, wrapped neatly, steam them till you see the banana leaves changed the color, perhaps 15-20 minutes.



I made again using different filling


This time I didn't use beef but thin noodle. I seasoned it with 4 cloves of garlic, 1tsp salt, 1tsp pepper, 3 fresh red chili pepper, 3 green chili pepper that I ground it using magic bullet. 

Cooked the veggies till tender. Covered it so it's done faster. Meanwhile, soaked thin noodle with hot water from tap water is okay.
Once it's ready, mixed with the veggies, add chicken bouillon powder. 

Prepare the rice, coconut milk, salt, bay leaves,coriander,lemongrass. Keep stirring in low heat till no more water. This time I cooked in a pot. Half done. The rice isn't completely done since it will be steamed after you wrap it.

Rolade Daging

The Ingredients

For the meat 
1lb Ground beef
1 egg
1 tsp of nutmeg
1 tsp of salt
1 tsp of pepper
1 small Onion and 2 cloves of garlic, chopped 
1 tsp of margarine

How to make 
Prepare the skillet with margarine, Saute the garlic and onion till they are tender. After little bit cold, mix all the ingredients above. You can use food processor. Put a side. 
Meanwhile prepare the egg to wrap it.

The roll wrapper
5 eggs 
100 ml of milk
1 tbsp of flour
1 tsp of salt 
1 tsp of margarine
Mix them all 

How to make
Prepare the wide skillet, perhaps 22 cm. Put little oil or margarine. Heat it up. 
Pour the egg dough till the dough fills around the pan *just like you make pancake* cook till it's done for about 10minutes or till you can lift it with your spatula ( use the thin flat one ) no need to turn it over, just one side is enough. Then Put it on aluminum foil ( make sure you have room for that ) 
Put the ground beef on top of it. Flattened it. 
Roll it till you meet the end and wrap it with aluminum foil
Steam for 45 minutes

For the sauce
1 onion and 2 cloves of garlic, chopped 
1 tbsp of margarine
1 tsp of salt
1 tsp of sugar
1 tbsp of tomato sauce
1 tsp of corn flour 
*I added tomatoes, fresh ones that i blended*
How to make
Saute the onion and garlic add all the seasonings. 
You can add potatoes just like i did or any vegetables.
Bring it to boil
  
How to serve
Open the aluminum foil and slice the rolade into a plate and pour with the sauce. You can add hot chili sauce if you like it hot! :-)

Garang Asam

My veggies plants grow lots! tho i have to fight with some slugs, hornworms n other pests! what a tough Job!
so green tomatoes, beans and green chili are taken from my garden Yay! isn't it something? cooking from your garden stuff! Proud of my self lol

Preparation
The meat, I used the same amount, 20 pieces of meat
2 green tomatoes, slices, 1 inch
4 green chili pepper, slices, 1inch
4 small green chili, some of them turned red, better, coz it's hotter lol
2 bay leaves
2 slices of galangal
2 tbsp of sweet sauce, if you don't wanna make it sweet, perhaps 1 tbsp
1 tsp of ground pepper
1 tsp of salt
1 tsp of sugar
100 ml of tamarind water (2 tbsp of tamarind paste dissolved with water)
1 cup of water, I used the broth from the boiled meat water
3 cloves of garlic, sliced-thin
3 big shallots, sliced-thin

How to cook
Cook the meat till tender, meanwhile, saute the garlic and shallots in 2 tbsp of vegetable oil. Add all the seasoning. Add the meat and water. Bring them to boil. Serve when it's hot!
