Otak-Otak -Fish cake in peanut sauce dressing-

My fav dish! So yummy! It's called Otak-Otak. Grilled fish cake wrapped in banana leaves and served with peanut sauce dressing.
I mixed fish and shrimps let's say 80-20. Since I don't know special fish that we used in Indonesia. Yup this is another traditional snack I love. Indeed expensive for this small dish tho in food vendor. Here's the link of recipe I used Otak-Otak Bangka
I take order for this delicious dish. Only for Jax area. It contains coconut milk that is delicate so I don't dare send it via post mail.

Red Snapper Soup

I still have one more snapper and I wanna make something different from the last recipe. I told my hubby that this is the last one we bought the whole fish snapper as well since I don't like cleaning the scale LOL but well he said"Na-ah, I love it and you should cook like this." Oh boy! :-)

The seasoning I used for this is quite the same as the calamari soup. Just open this http://foodyfitri.blogspot.com/2011/06/calamari-soup.html
The preparation for the fish is the same, marinate it with lemon juice for about 15 minutes after you clean the fish.
For the veggies, besides adding the carrots,  I used chocho since I didn't have any other veggies. *google it if you wanna know the photo*
The chocho you can get it at asian market. Well if you can not find, just use another veggie that you have like beans, cauliflower etc. I added also 5 red chili peppers, slice into small pieces. If you can't find red chili, green would be okay, such as Jalapeno. It's to add the spicy flavor if you like it spicy just like my hubby LOL. Here's the photo taken by my hubby's BB. :-)

Gulai Ikan Kakap-Red Snapper in Spicy coconut milk Soup

Using the recipe from here http://dapur-cantik.blogspot.com/2007/11/gulai-ikan-kakap.html but I only used things I could find in Florida. Asam kandis i just replaced using asam jawa (tamarind paste) well i don't know if it might make different but i find myself just fine. My hubby loves this dish! that's the important thing LOL.

What do you need to prepare :

1 whole red snapper, clean the scale, wash and cut into smaller pieces and marinate it in lemon juice.
1 onion, 1 shallot, 4 cloves of garlic, 4-5 red chilies pepper, 2 slices of ginger, 1 tbsp of turmeric, 1 tsp of cumin, 1tsp of coriander, 1 tsp of nutmeg. Blend them all using food processor till they are turned into paste.
Prepare the skillet. Pour the vegetable oil to saute the paste. Once it's simmer, pour the water *1 cup of water or 1 1/2, wait till it's boiled. Put the fish. 1Lemongrass, 2 bay leaves. Pinch of tamarind paste. Half cup of coconut milk. Sliced Beans. Cook till they are tender. Add slices of cherry tomatoes. Pinch of salt, little sugar. Serve with Jasmine rice.
