Opor Ayam Kuning
Opor Ayam Kuning is so yummy!Especially served with Indonesian rice cake a.k.a Lontong. Hubby loves it! And to make it spicier I cooked spicy potatoes with shrimps. They compliment each other.
Ingredients
Seasoning
1/2 big yellow onion
3-5 cloves of garlic
3-5 macadamia nuts
3tbsp olive oil
2tbsp kosher salt
1tsp of turmeric
2tbsp pepper
1tsp grind fennel
Grind them all using magic bullet till it turn into puree then saute it
Additional seasoning added
*once it's cooked in chicken*
Some Lemongrass
couple of bayleaves
couple of kaffir limes
cinnamon
1 can of coconut milk
Method
Boiled the chicken in 3-4 cups of water
add lemongrass, bayleaves, kaffir limes, cinnamon
Pour the sauted puree once it's boiled, stir well and add coconut milk till it's boiled again. Cook till the chicken tender. I like the chicken over tender if cooking in yellow broth like this.

Soto Ayam Lontong
Sooo Happy!!!
Lontong is done!
perfect using Indonesian rice cake molds I got when I was in Indonesia.
Woohooo!
This is my beautiful yummy rice cake! named lontong.
I actually never have soto ayam served with Lontong until I was in Lombok when I ordered soto ayam and got lontong in it! Ahhh so full tho.
Lontong is made from rice, wrapped in banana leaves and boiled for quite long but since I have presto "pressure cooker" so it takes only 40-45min. Awesome!
I used short grained rice, Indian style but I forgot the name of it.
The thing is we don't like it but we got plenty!Oh boy.
This is an experiment also n glad I could make it into Lontong and taste better!
I boiled with pinch of lime stone I got from oriental market. Back in Indonesia, people add it in rice if they make ketupat *coconut leaves rice cake* to make the rice solid n soft.
Usually I eat with hard boiled egg, vermicelli noodles and rice.
If you wanna spicy then add sambal, that would be good choice to eat it with.
To be honest the making of yellow broth this time, I had ready one in a jar,
it's "Bumbu soto ayam, chicken soup seasoning, Cap Ibu (mother brand)
Resep tradisional asli Indonesia.
Bumbu soto ayam (click that)
I got it in Tampa. Just added a pinch of salt, some kaffir lime leaves, galangal n ginger roots fresh.

Ayam Pop-Chicken POP
I have no idea why this food named AYAM POP :-) I only know that you can find this at SIMPANG RAYA restaurant. Sumatra's food flavor. Spicy Hot Yummy. I browsed the recipe but i found one thing that i didn't have, coconut water. Think hard girl. Cling! *the bulb lamp is on my head if you can take pic of me at this moment LOL* so I used the coconut powder plus lots of water then it looked like coconut water! Aha!!
How to cook :
Prepare 6 chicken wings *that's all I like, wings!* You can use other parts of the chicken. Cleaned and marinated with lemon juice for about 30 min. According to the recipe you have to skinned the chicken but I let the skin stay since it's the best part LOL.
1-2 tbsp of coconut powder mixed with 2.5 cups of water. *if you have coconut water, then use it instead* Put it in a pot. Boiled with the chicken as well.
seasoning :

1 tsp of salt
1 tbsp of ginger
1 tsp of sugar
1 tsp of pepper
Saute the garlic with 1 tbsp of margarine for about 10min. Add the rest of seasoning as well. Put it into the pot of the chicken. Cook till the chicken tender for about 20min. *Depends on which part of the chicken meat you cook i guess* Take the chicken out of the pot. Leave the broth. *can I use it again for next cooking?LOL*
Prepare the skillet with 1-2 tbsp of vegetable oil. Fry the chicken just to make it little bit oily and light brown. *Some people don't like to fry it after the boiling part* Serve with sambal, Chili paste, steamed-Casava leave and jasmine rice. Hmm YumYum.
