Singkong Thailand


To tell you the truth I have no idea why this dessert got Thailand name. Probably it's from Thailand?? Well ^^
This is the simplest dessert I've made I think so far.^^

I should've made it when I was fasting tho. For breaking the fast. Yumm.
Ingredients & Method

1/2 lb frozen cassava/yucca 
100g sugar
1/2cup water
Put them all in a small pot,cook till the yucca is tender. (I steamed it first and boiled in sugar water)
Put aside. Put some that you wanna eat in a small bowl.

250 ml coconut milk
1tsp salt
3 tsp corn flour, dissolved in couple spoons of water.
Bring the coconut milk to simmer, mixed it well. Add the salt, and corn flour. Mixed it till it becomes thick. If you have pandan leaves (screw pine leaves) add it to make the fragrant. I put kaffir limes only. Had no pandan leaves. 

How to serve
In a small bowl that you have put cassava/yucca, pour the sauce coconut milk you made. Eat it while warm. Good for your tummy in this freezing time. ^^
