Siomay Bandung

The best "cemilan" steamed snack I've ever made. So Happy! 

This is the combination of shrimps, fish and chicken. I browsed the recipe from http://www.resepkomplit.com/resep-somay-bandung.html in Bahasa Language. Let me try my best translating it. P.S : I skipped ebi n labu siam coz i dont have them. I added grated carrots instead! and chopped scallion.

Ingredient A :
6 big shrimps
2 flounder fillet *I used Tilapia*
1 pack of skinless thigh chicken (5 pieces)
Ground them in Food processor

Ingredient B :
4 cloves of garlic
4 shallots
1 Tbsp of pepper
1 Tbsp salt
1 Tbsp of sugar
5 Tbsp of fish sauce 
1 green onion chopped
Make them all into puree *use mortar or blender*

Ingredient C
150 gr of tapioca flour
1 Tbsp of all purpose flour
150ml water * or 4 ice cubes*

How to make : 
Mixed A,B,C well. Prepare the steamer. Once you make the dough, you have to cook it right away. Prepare the potatoes, bitter gourd, tofu. Make them room for stuffing the dough. For potatoes, cut into 2pieces 
n dig a space for filling. For 1 square big tofu, cut into 4 pieces, dig a space for filling as well. For bitter gourd, clean it and cut the round shape n take the seeds out, replace it with the dough. The rest of the dough is for wonton wrapper *optional*
Take 1 spoon n wrap it up. Put them all in steamer. Cook till the veggies tender.

The sauce :
200gr of peanut, fry and ground 
2 Tbsp of palm sugar
1 Tbsp of sweet soy sauce
4 cloves of garlic, ground
1 boiled potato, mashed
1 cup of coconut milk
Mix them all in skillet n cook in low heat for about 10min.
Ready to be served with siomay. Add sri racha hot sauce if you want it spicy! Bon apetite.
