Black Rice Pancake-Martabak Ketan Hitam




Martabak Ketan Hitam-Black Rice Shredded coconut Pancake Filling, i can say :-) is one of my fav martabak since it's not too sweet compare to other kinds of martabak. Wanna try making it?  Let's see how i can translate the recipe with my broken English  :-)

For the Filling :
Black Rice
250 gr Black Rice, soaked it for 1hour
100 ml water
2 drops of Pandan flavor
1 tsp of salt
Coconut
200 gr Shredded Coconut
75 gr sugar
2 drops of Pandan flavor
1 tsp of salt
50 ml water

For the Doug :
225 gr of all purpose flour
30 gr sugar
1/4 tbsp baking powder
1/2 tsp salt
300 ml water
1/2 tsp yeast
1egg, beat it
1/4 tsp baking soda
1 tbsp melted margarine

How to make 
Steam the black rice for 20 minutes, meanwhile, boil the water with 2 drops of Pandan flavor and pour it, add salt, stir and continue steaming it for 30 minutes or more if the rice isn't done (tender).
For the coconut, mix them all and boil till the sugar absorbed in coconut.
Sieve the flour and baking powder. Add sugar and salt then mix. Pour the water slowly while you stir it and beat the dough sometime. After all mixed, leave it for 15minutes. 
After 15minutes, add the egg, yeast, baking soda, sugar and melted margarine, stir it well and leave it for 30 minutes. 
Prepare the mini frying pan and take the dough (1-2big spoons) and cook it till u see the holes

and then add margarine and the filling (just half side) and fold it *be careful, don't put the filling too much otherwise u can't fold it*
