Kue Lumpur Pandan & Keju


Yuhuuu another yummy healthy snacks! :-) "Kue Lumpur" I don't really know how its named so ugly. Lumpur is mud lol but it's far from mud :-)
I don't have the real pan for this. You can use pofertjes pan probably but here i used muffin pans *be sure you have non-stick ones* and I put aluminum foil to cover them when they'r baked. The real pan has lid for that.


Ingredients : 
200gr flour
400ml coconut milk
100gr margarine, melted
1 tsp salt
1 tsp vanilla
3eggs
125gr sugar
3 big potatoes, peeled, mashed smoothly
Pandan flavor McCormick for coloring or Cheese, Chocolate, Raisins for topping

How to cook :
Mix sugar and eggs till they changed color into pale and develop. Add salt and vanilla. Pour coconut milk, flour slowly, mixed them well. Add melted margarine. Mix them well. Separate the dough into 2 bowls if you wanna make different color. I added 5 drops pandan flavor in one bowl and the other was plain.

Prepare the muffin pans that've already been heated before. Grease with margarine/Pam cooking spray. Pour the dough half full. Cover it with aluminum foil. Bake for 15-20min. Take the pans out and Garnish with raisin, cheese or chocolate. Put them back in the oven n change into Broil for about 7min.
